Castello di Gabbiano was founded in 1124 in the heart of the renowned Chianti Classico region. During the Middle Ages, a courageous Italian knight, Il Cavaliere, dedicated himself to protecting the castle and its vineyards. His code of honor embodied Gabbiano's philosophy that the best things in life deserve the greatest dedication—the estate's vineyards, Old World traditions, and the enjoyment of robust wines.
Only the finest grapes from the estate vineyards were selected for this Riserva. Fruit parcels from different locations are kept separate during fermentation and aging, creating an attractive range of flavors and textures for blending a month before bottling. Fermentations take place on the skins in small stainless steel tanks, individually controlled: punchdowns and déléstages are applied according to each must. To round out the wine while maintaining optimal freshness, the juice underwent secondary natural malolactic fermentation in stainless steel plus a portion (50 percent) of French oak. The wine was aged for twelve months in traditional French oak barrels and small barriques—only 10 percent new oak—and then received an additional twelve months of bottle aging before release.
