Domaine Preignes Le Vieux is a winery housed in a magnificent old castle dating back to Roman times, but primarily medieval. This family-run estate, which has existed for five generations, produces wines exclusively from its own vineyards. Jerome Vic heads the business, while his wife Aurélie Vic, a passionate oenologist, is responsible for crafting the Minervois. Aurélie has a deep love for the Languedoc's roots and strives for character and balance, delicacy and harmony in her wines. The region is vast, and the wines offer a variety of flavors and profiles. The wines from this estate must be versatile, with delicate flavors and drinkability. Furthermore, they must, of course, reflect the terroir. And this estate excels at that. The Greg & Juju Marselan Syrah is harvested at night to keep the grapes cool and prevent oxidation. After harvesting, the grapes are pneumatically pressed to extract the juice. Neutral yeasts are used during fermentation to avoid affecting the wine's flavor. Maceration on the skins lasts 12 days at a temperature between 15 and 20 degrees Celsius. This process extracts the wine's color, flavor, and aromas. After maceration, the wine is pressed and aged in oak barrels to develop its full character and complexity.
