The Creation of Ventisquero GREY Chardonnay
Viña Ventisquero, though relatively new to the wine world, has quickly established itself as a pioneer in modern wine production. Thanks to the vision of Gonzalo Vial, the driving force behind Chile's largest agribusiness, Agrosuper, this winery established itself in the Maipo Valley, expanding into Casablanca and Apalta Valleys. Their first harvest in 2001 was a testament to their dedication and hard work.
The grapes are harvested in March, at the height of their aromatic richness. A careful cold maceration of 12-14 hours follows, with careful avoidance of air contact. Fermentation is a slow and controlled process at temperatures between 13 and 16 degrees Celsius, resulting in an explosion of characteristic aromas. A full 80% of this wine is aged in French oak barrels, 10% of which are new. The remaining 20% is stored in stainless steel vats to preserve the fruity essence. After fermentation, the wine is aged on its lees for another twelve months, with regular bâtonnage, which contributes to the aromatic depth.
