The warm weather and cool evenings also significantly influence the quality. When the grapes are perfectly ripe, they are brought in plot by plot. To ensure the wine isn't too harsh or dry, fermentation takes place on the skins for just seven days. This is followed by aging in French oak barrels, varying from 12 to 14 months depending on the vintage. The phenomenal result is certainly something to be proud of!
