Viognier has undergone a true revival in recent decades. It began its reign in the northern Rhône, of which Condrieu is the most famous name. However, its planting area has increasingly shifted southward, and it has already proven its worth in Languedoc-Roussillon. The vineyards are situated at exceptionally high altitudes—sometimes as high as 100 meters. This creates a significant temperature difference between day and night, something the Viognier grapes thrive on.

After the harvest of the fine, yet beloved Viognier grapes, the winemaker takes charge. Fermentation takes place in both stainless steel and oak barrels. About a third of the juice is fermented in oak, giving the Jean Claude Mas Viognier that special something. Maturation on its own yeast cells is also special, developing spicy aromas and flavors such as dried apricots, orange blossom in bloom, and a hint of acacia honey, complemented by toasted bread.
