12 months of wood aging for Kleine Zalze Cabernet Sauvignon Cellar Selection
The Cabernet Sauvignon grapes are sourced from select plots across the Western Cape. The grapes are harvested in the early morning to preserve freshness. Half of the wine was fermented in traditional open fermenters and the other half in stainless steel tanks. A combination of punch-downs and pump-overs is used. Gravity is used to separate the wine from the skins after fermentation, followed by malolactic fermentation in stainless steel tanks. Finally, the wine is aged for 12 months in French oak barrels.
It has become a very typical Stellenbosch Cabernet Sauvignon. The aroma reveals abundant red fruit and ground spices.
