The vinification process of Korsic Ribolla Giallo Collio

For many generations, the Korsic family has cultivated vineyards in the Collio region, located in the northeasternmost part of Italy, bordering Slovenia. The winery is situated in the picturesque hilltop village of San Floriano, overlooking the rolling hills of Collio to the south and the Alps to the north. The grapes are harvested entirely by hand at the end of September. This improves quality because selection can take place in the vineyards themselves. In the winery, destemming and gentle pressing follow. The juice then undergoes fermentation at a controlled temperature in stainless steel tanks. After fermentation, the wine remains in barrels on its own fine lees, where it matures for several months.
