The Caring Production of La Braccesca Achelo
Patience is a virtue, and that certainly applies to the Syrah grapes of La Braccesca Achelo. They are not harvested until September, when they reach their peak ripeness. At the La Braccesca winery, they are then treated with precision: carefully destemmed, gently pressed, and subjected to cold maceration and fermentation in stainless steel vats. Seventy percent of La Braccesca Achelo is then transferred to used barriques for further fermentation and aging, while the remaining 30% continues to develop its character in stainless steel tanks.
