The beautiful vineyards for this Les Faisses are situated in the best locations around Limoux. The Chardonnay grape thrives here and produces rich and full harvests. But the winery also owes this to the age of the vines, which now have an average age of 25 years. After harvest, this white wine is aged for a full nine to twelve months in oak barrels. Paul Mas selects both American and French barrels for this Les Faisses Chardonnay. The variety of oak types and the subsequent aging of some of the wine in new, unused barrels give this white wine its fullness. This gives the wine a refined and elegant aroma, with notes of tropical fruits, hazelnuts, and citrus, supported by a hint of vanilla.
