The Chardonnay is arguably the most successful grape variety of the Limoux region. This part of the Languedoc region, in the foothills of the Pyrenees, is surprisingly cool. This climate produces a Chardonnay with plenty of tension and freshness. That's precisely why this grape forms the basis for this white wine. It comes from the 'Saint-Estiennes' plot, a historic vineyard of three hectares. The vineyards are farmed biodynamically. For this wine, the Chardonnay is blended with small amounts of Chenin and Mauzac, two grapes native to this region.

The perfect conditions for the Chardonnay

Limoux is a small town nestled in the heart of the magical landscape south of the fortified city of Carcassonne. Its unique microclimate and vineyards, rising to over 200 meters in altitude, are perfect for producing superb wines. One of Limoux's top producers is Château de Gaure. Owner Pierre Fabre converted the farm, nestled in the heart of nature, to organic viticulture in 2005. They produce both white and red wines of sublime beauty, almost mystically revered by true connoisseurs. The whites are made from Chardonnay, Chenin Blanc, and Mauzac, while the reds are made from the Mediterranean classics Grenache, Syrah, Carignan, and Mourvèdre. Château de Gaure's wines stand out for their individuality and a very pure, intense flavor. They are handcrafted wines with strong character—a true discovery!

The vinification of Chateau de Gaure Limoux

This delicious Limoux is no exception. After being harvested by hand, the grapes undergo low-temperature fermentation in oak barrels, where they naturally ferment. Malolactic fermentation then takes place in the barrel, followed by maturation on the fine lees. This lees is regularly stirred, resulting in abundant richness and depth. A delightful white Limoux, a unique expression of the terroir and grapes of this exceptional region. The aroma is broad and lightly toasted, with notes of hazelnuts and apricots, yellow plums, grapefruit, and citrus. Full and juicy, with fine acidity and opulence, beautifully rounded, broad, rich, complex, powerful, and yet minerally.
