• Soil: The vines grow on iron-rich clay-marl. This soil gives Pinot Noir structure, depth, and a subtle earthy tension.
• Vineyard and harvest: The vines are on average 25 years old, and the yield is around 45 hl per hectare. The grapes are harvested by hand.

• Fermentation: The wine undergoes traditional fermentation in temperature-controlled stainless steel tanks and completes full malolactic fermentation. This converts the fresh malic acid into softer lactic acid, making the wine feel rounder and smoother.
• Aging: The wine ages for 10–12 months in stainless steel tanks. This maintains the focus on pure fruit, freshness, and the expression of Givry's origin, without a noticeable oak influence.
• Aging potential: Louis Latour Givry Rouge 2023 can be stored for 3–5 years. With some bottle aging, the tannins soften, and the spicy and earthy notes further integrate with the cherry fruit.
Tasting notes and serving suggestions
Louis Latour Givry Rouge 2023 has a deep color with garnet red reflections. The aroma opens with sous-bois, nutmeg, cherry, and almond. The taste is full and round, with elegant tannins, crisp cherry, and a fresh finish.
