Biodynamic wines from Lunaria
Cantina Orsogna, located in the town of the same name in the province of Chieti, is a cooperative founded in 1964 and today has 600 contributing members cultivating over 1,400 hectares of vineyards halfway between the sea and the Maiella Mountains. The Lunaria winery produces biodynamic wines, which form a portfolio of labels, spanning white, red, sweet, and sparkling wines.
The grapes are harvested in the vineyard's biodynamically cultivated, high-altitude vineyards (at an altitude of 450-500 meters), where relatively cool growing conditions allow for a longer ripening process, resulting in highly aromatic and crisp wines. The wine naturally effervesces in the bottle, converting all the sugar into alcohol, hence the term Brut Nature.
The vinification of Civitas Pecorino Ancestrale Spumante
The wine is not fermented a second time, thus preserving the grape's natural, fruity, and aromatic nuances, as well as a natural sediment that gives the wine even more character. After bottling, fermentation resumes without the addition of sugar or yeast. With this method, the wine is not filtered, and the lees remain in the bottle. This gives the wine a slightly cloudy color. This Lunaria Civitas Pecorino Ancestrale Spumante has delightful aromas of tropical fruit, peach blossom, and a soft spiciness. The palate is full, complex, and spicy. The bubbles gently enter the mouth and refresh it again and again. Finally, it has a slow, pleasant finish. A perfect wine to savor.
