The Primitivo grapes come from vineyards surrounding the city of Lecce, where yields are kept low and the average vine age is between 15 and 25 years. At peak ripeness, the grapes are harvested entirely by hand and taken directly to the winery. Destemming follows, during which the grapes are not crushed. Fermentation follows in stainless steel tanks at a controlled temperature of 23 to 25 degrees Celsius. After malolactic fermentation, the wine is transferred to stainless steel tanks where it rests for several months.
