 Miopasso is a project by the producers of Santa Tresa wines. The Miopasso series is a high-quality wine made from indigenous Italian grape varieties. The goal is to bring these traditional styles of wine to the international market, reflecting the true taste of Italy. This is achieved through modern vinification.
 
Santa Tresa is one of Sicily's oldest and finest wineries. They produce top-quality wines from indigenous grape varieties grown in Vittoria. The grapes here benefit from ideal weather conditions. The vineyards enjoy the Sicilian sun and a cooling sea breeze, far enough from the sea. The result is organic wines with the ultimate expression of the grape varieties. They own 50 hectares of vineyards, largely planted on a unique soil of red clay, with a thick layer of limestone beneath. This limestone acts as a silt and stores water, ensuring the vines receive sufficient moisture even in high temperatures.
 The vinification process of Miopasso Primitivo
 
The grapes come from select vineyards on the Salento Peninsula in Apulia, in the Leverano region. The grapes are harvested by hand in September. After harvesting, they are transported in small crates to the winery where they are gently pressed, leaving the skins intact. Fermentation takes place at a controlled temperature of 22 to 24 degrees Celsius. This process ensures the best color extraction, a beautiful bouquet, and soft tannins. After malolactic fermentation, the wine is kept on its fine lees until late February or early March. The result is a full-bodied, supple red wine with a pleasantly dominant fruit character. The fruity aromas of berries and plums are beautifully reflected in the palate, enhanced by soft tannins and low acidity. Excellent with rich pasta dishes.
