The vineyards are located in the heart of the Valpolicella region, in the villages of Negrar, Marano, San Pietro in Cariano, and Fumane. Here, Corvina, Molinara, and Rondinella grapes are grown in a centuries-old vineyard. The old, thick vines produce a top-notch harvest, thanks in part to the rich soil structure. This soil is a treasure trove for the plants, and you can taste that in this red wine. When the grapes are ripe, they are harvested by hand and rigorously selected; only the best are considered for this red wine. After harvesting, the bunches are laid out in beds and then dried in drying houses. During the drying process, the bunches lose approximately half their original weight, leaving the juice much more concentrated than with a direct pressing. After this crucial period for an Amarone wine, the bunches are pressed, and the juice is of unparalleled quality. This is followed by a long aging process in oak barrels for a period of up to three years—yes, you read that right. Large Slavonian wood casks and French barriques are used. The wine then rests in the bottle for another six months before being released. The result is a truly festive experience!
