This red wine is made in the same way as Ripasso della Valpolicella. However, this term is not permitted because the vineyards are not located in the Valpolicella region. The Corvina grapes come from vineyards around Verona. They are carefully harvested at peak ripeness and taken directly to the winery. Here, a strict selection process takes place, ensuring only the finest grapes are used for the final wine. Fermentation takes place in stainless steel vats at a controlled temperature of 18 degrees Celsius for 15 days.
