Description
This Palombe is a true gem of a rosé from the Pays d'Oc wine region. Here, the Cinsault and Grenache grapes grow in a Mediterranean climate with abundant sunshine, resulting in a balanced growing season. The grapes also receive plenty of coolness from the mountain breeze and the nighttime temperature, which often drops sharply at night. The dew that falls on the Cinsault and Grenache grapes provides a cooling effect, which we taste in the fresh flavor of this rosé. The nutrient-rich soil also plays a significant role in the final result; the abundance of limestone and pebbles gives this rosé a Provence-like character in both aroma and taste.
The harvest of the Cinsault and Grenache for this rosé
To maintain freshness during the harvest of the Cinsault and Grenache grapes, the harvest begins early in the morning. When the grapes are still dormant and cool, the risk of damage during transport is minimized. They are collected in crates and transported to the Palombe press, where they undergo a gentle pressing and only 20 minutes of skin contact.
