The Cantine Paradiso winery was founded in 1954. At that time, there were many impoverished winegrowers in Puglia, yet Angelo Paradiso saw a future in the old vineyards. He started the winery, and it quickly prospered, producing excellent wines. Over the years, the family has invested heavily in, among other things, maintaining the vineyards and establishing a modern winery while preserving ancient Puglian traditions.

The old, thick stems stand in a strong soil structure from which the plants draw abundant nutrients. This contributes to the magnificent harvest, and combined with the perfect climate, makes this red wine unique. The bunches enjoy Puglia's many hours of sunshine but also receive plenty of coolness. This refreshment comes from the ocean breeze that blows through the vineyards. This ensures a slow and balanced growing process. Once all the grapes are harvested, they are gently pressed, and this powerhouse is aged for a full twelve months in oak barrels. Cantine Paradiso uses medium-toasted French Allier oak barrels, which further enhances the wine's fullness. After aging, the bottle is allowed to mature in Cantine Paradiso's cellars.
