What a gem this Pecorino is! Made from one of Italy's most special grapes, it was almost extinct. Fortunately, this grape variety was rediscovered and saved just in time. This regional grape is perfectly suited to the local climate. The combination of mountain slopes and this unique grape results in flavorful and aromatic wines with lovely acidity. The Feudi Bizantini winery knew exactly what to do with the Pecorino grape and has successfully brought this beautiful wine to the market.

The brand-new Feudi Bizantini winery is one of a fascinating list of newcomers. Founded in 2012 by a group of wine enthusiasts who wanted to put their passion for wine into practice, the winery's unique combination of climate, terroir, grape varieties, and human touch has earned it a unique place on the Abruzzo wine list. The vineyards are located near the village of Crecchio, southeast of the coastal town of Pescara on the Adriatic Sea. This unique location allows the vineyards to benefit from the cooling influences of both the mountains and the sea, resulting in wines with abundant aromas and power, characteristic of this wine region.The vinification and taste of the Passofino Pecorino
The soil where the vines are planted consists of calcareous clay and a little sand. This location creates significant temperature variations between day and night. Moreover, the constant wind ensures excellent ventilation in the vineyard, keeping it dry and minimizing disease. These ideal conditions are particularly beneficial for the grapes. They ripen perfectly, are fresh, elegant, and have beautifully complex aromas. The grapes are harvested by hand in September. The wine is fermented and aged in stainless steel tanks at a low temperature between eight and eleven degrees Celsius. The wine is left to age for about three months, after which it is bottled. And then you have a delicious Passofino Pecorino. A fruity white wine, juicy and dry. Italian white at its finest. The aroma is intense with ripe white fruit—peach, nectarine, mandarin, and papaya—broad and powerful. The taste of this Passofino Pecorino is truly sensational: full and powerful, rich, long, not too heavy, with fine acidity and bitterness, depth, and beautiful intensity.
