At night, the temperature drops further, allowing them to sleep peacefully, because grapes develop best when kept quiet and clean. The growing season is long, and the grapes are harvested by hand at the perfect ripeness and acidity. This is followed by a three-month aging process in both French and American oak barrels. But that's not all, because this Pater Sangiovese Toscana is then aged for another three months in steel barrels and another two months in the bottle. Only when the quality is superb and the Frescobaldi family is as proud as a peacock are the bottles sold.
