For this white wine, it all began in Paul Mas's old vineyards, as he decided to dedicate his top vineyard of twenty-five years to this white wine. The harvest and yield of the Chardonnay grapes are exceptionally good, prompting him to say "ChaChaCha" in the vineyards. With these words, he showed us how beautiful the grapes were. They grow in the best climate in the Pays d'Oc, where abundant sunshine allows the grapes to ripen beautifully. And the fresh breeze blowing through the vineyards provides just the right amount of cooling. The harvest is entirely by hand in the early morning, which minimizes the risk of oxidation. Each bunch is thoroughly inspected, ensuring the juice of this ChaChaCha Chardonnay is pure and clean.
Wood aging for the ChaChaCha Chardonnay Paul Mas
Once the grapes arrive, they are immediately pressed, and the skins are left to ripen for about three hours. This adds a touch of extra roundness to this white wine. But that's not all, as part of this white ChaChaCha Chardonnay is aged in oak barrels at Paul Mas's cellars. This just goes to show how beautiful this white wine is, and it's a true celebration. It all begins upon opening the bottle, as we immediately smell a rich aroma of tropical fruit and vanilla. As soon as the wine is poured into the glass, a golden yellow color appears that clings beautifully to the glass. Nosing this ChaChaCha Chardonnay, we noted impressions of tropical fruit, vanilla, freshly baked bread, and some oak. The palate is full and creamy, with a very pleasant mouthfeel. On the palate, there are abundant fruity notes such as pineapple, mango, peach, and a touch of lime. The finish is smooth and powerful with a lingering aftertaste!
