Wood aging for the Paul Mas Reserve Merlot
After a long, beautiful ripening period on the vines in France, the Merlot grapes are harvested mechanically overnight. Upon arrival, all Merlot bunches are placed on sorting tables and subjected to rigorous quality control. According to Jean-Claude Mas, the purity of the juice is crucial, and we certainly taste that. After pressing, thirty percent of the wine is aged in oak barrels. Both French and American oak barrels are used to give this Merlot greater strength and suppleness.
