The owner of Paul Mas Estate is often called the pioneer of Southern France because he's always searching for new varieties. This red Pinot Noir is also a wine from Jean-Claude Mas. He wanted to create a kind of Southern French Burgundy with the same inspiring style. Well, he deserves a gold medal from us, because this is so beautifully made. High on the hills of the Languedoc, the vineyards are filled with Pinot Noir grapes. Thanks to the abundant coolness in the vineyards, the Pinot Noir grape is completely at ease and grows like no other.
Wood aging for the Paul Mas Estate Pinot Noir
After a long period of ripening on the vines, the grapes are harvested mechanically at night. This prevents damage to the bunches and prevents oxidation. Upon arrival at Paul Mas, the Pinot Noir grapes are placed on sorting tables. They are meticulously inspected and prepared for a gentle pressing.

This Paul Mas Estate Pinot Noir is aged for an impressive six months in oak barrels, giving this red wine more depth and finesse. The aroma immediately reveals that this Paul Mas Estate Pinot Noir has been aged in oak, as we discovered aromas of cherries, strawberries, red berries, soft spice, and a hint of vanilla. The velvety taste is fantastic, rich, and full-bodied with plenty of hints of cherries, raspberries, and some spice. The finish is also jammy with plenty of bite! Truly delicious, right down to the last drop.
