He's also called an artist or a creature, Mr. Jean Claude Mas, and we couldn't agree more. This man can make wine like no other and strives to make his wines taste like the grapes. This should be a given, but Jean Claude Mas says, "You should be able to taste the grape in all its beauty." Well, that's true of all Paul Mas wines: beauty and purity in their purest form. But that doesn't happen automatically; it requires hard work in the vineyards.
The old Merlot vineyard of Paul Mas
In the south of France, Paul Mas's ancient vines are filled with the finest Merlot bunches. The vineyards are located in both the Hérault and the Uzès valleys and are grown in the best conditions. The Merlot grapes thrive under perfect weather conditions, with abundant sunshine, natural cool nighttime temperatures, and fresh mountain breezes. All of this allows the Merlot grapes to mature peacefully and evenly. When the grapes are ripe, they are harvested early in the morning to preserve their natural freshness. Upon arrival at Paul Mas, the grapes are inspected before being pressed. Only the finest bunches are used to produce this red wine from Vignobles Paul Mas.
Light wood aging for the Paul Mas Merlot
Paul Mas's softest wine, made entirely from the Merlot grape. Abundant ripeness and a ripe mouthfeel complete this wine. The color is an inviting purple-red. The aroma of this Paul Mas Merlot is broad and refined, with beautiful hints of plum and blackcurrant alongside spicy notes. The palate is smooth and soft with another lovely bouquet of red fruit and a light hint of vanilla. The latter is partly due to the wine's very light oak aging. During this period, the wine gains even more softness and refinement! A top-notch wine, this Paul Mas Merlot, with elegance as its magic word!
