The grapes for Perdeberg Cellar The Vineyard Collection Chardonnay were hand-harvested in mid-February in the early morning when the weather was still cool. The soils consist of a combination of decomposed granite and sandstone. These vineyards receive little to no irrigation and rely on natural rainfall. These growing conditions result in small berries and concentrated fruit flavors in the grapes.
At the winery, the grapes are then destemmed and left to rest on the skins for several hours. Seventy percent of the wine is fermented in stainless steel tanks to preserve the pure, concentrated fruit characteristics of the grapes. An additional 30 percent is fermented in a 5,000-liter French oak foudre. The wine then matures on the lees for five months before being blended and bottled.
