The perfect soil structure for Perdeberg Cellar The Vineyard Collection Sauvignon Blanc
The grapes for this Sauvignon Blanc were harvested from 18- and 19-year-old bushvine vineyard blocks in the Darling and Elgin areas. Harvest took place in the cool, early morning of mid-February, when the grapes are at their peak ripeness. The soils in these vineyards consist primarily of decomposed granite and Malmesbury shale. Little to no irrigation is used, making the vineyards dependent primarily on winter rainfall.
The grapes are transported to the winery in small crates. Here, they are destemmed and then left on the skins for several hours. Only the free-run juice is used, and great care is taken to clarify the juice before fermentation begins. The wine is then fermented in steel tanks to ensure the pure, concentrated fruit characteristics of the grapes are preserved. After fermentation, the wine is aged on the lees for three months to ensure complexity and longevity.
