The beginning of Pere Ventura

The history of the Pere Ventura winery dates back to the 19th century, the birthplace of cava. Today, the estate stands for high-quality cava with great finesse and elegance. The winery combines modern expertise with classic, traditional techniques. The vineyards are located in the heart of the Spanish cava region: Sant Sadurni d'Anoia, where no less than 90 percent of Spanish cava originates. The varying altitudes and soil structures create a diverse landscape, and thanks to the ideal Mediterranean climate, the grapes can develop optimally. The blend consists of 60 percent Xarello and 40 percent Chardonnay. The different grape varieties are carefully harvested by hand and softly pressed separately to obtain only the best juice. Part of the Chardonnay is fermented and aged in barrel for five months. This gives the cava more structure and delicious toffee, toast and smoky aromas. After blending, careful clarification and filtration take place. The second fermentation takes place in the bottle and the cava matures for a total of 36 months in the deep underground cellars of Pere Ventura.
