Every Spaniard knows the exceptional quality of Portium, a winery that has been producing the finest Cavas since 1985. It is located in the heart of the Penedès wine region, approximately forty kilometers south of Barcelona. Here, there are approximately one hundred hectares of vineyards filled with three grape varieties: Macabeo, Parellada, and, of course, a touch of Chardonnay. The grapes are cultivated with great love and care, which, according to Portium's winemaker, is no easy feat. A great deal of love, pruning, and attention to the grapes result in a unique harvest that you can taste in all of Portium's Cavas.
The old vineyard of Portium Cava
The vineyards date back up to fifty years, resulting in very full bunches that are renowned throughout the region. Portium's bunches are always in top condition. The vineyard faces southeast, giving the bunches plenty of sunshine. However, because it's situated at an altitude of five hundred meters, there's also plenty of cool wind and falling nighttime temperatures. This blend of warmth and coolness contributes to a unique piece of Spanish craftsmanship. Early in the morning, the bunches are brought in and thoroughly inspected. Only the finest bunches are used for this Cava. Only with the utmost precision can it compete with Champagne.
What does Portium Cava taste like?
Before we can enjoy this Portium Cava, there's a lot of work to be done. First, the winemaker creates the blend. He's an unparalleled master at delivering consistent quality year after year. Just like French Champagne, the bottles of Cava are aged in the cellar with yeast and sugar, creating soft bubbles. This period lasts 6 to 8 weeks, after which the bottles are aged for another two years in Portium's cellars. So, it's not just any old glass of Cava, and yes, we've often wondered how it can be at this price. Pouring this Cava reveals a golden yellow color with soft bubbles. The aroma offers beautiful impressions of freshly baked bread, fresh citrus notes, and a touch of almond. The taste is delightful, with a soft mousse, refined fruit nuances, and aromas of grapefruit and green apple. What a superb Cava!
