The Sauvignon Blanc grapes for the Pearl of Pounamu come from two terraces in three different areas within the vineyard. The lower terraces contain stony silt soils with fine sandy loam. The upper terraces, on the other hand, contain more gravel.
The grapes are harvested entirely mechanically in the early morning. This allows the grape bunches to be transported to the cellar as quickly as possible and prevents any oxidation. Once in the vinification room, the grapes are immediately destemmed, gently pressed, and then the juice is left to settle, allowing the coarser constituents to settle. The juice is then transferred to stainless steel tanks, where temperature-controlled alcoholic fermentation takes place for two weeks.
