Description
Craftsmanship is what the Cavas of Raventos i Blanc are known for. The winery itself was founded in 1982 when Codorniu President Manuel Ravento left his job to pursue his dream. He wanted to produce the finest Cavas in Spain without exorbitant prices. Fueled by his extensive experience, he and his father sought out the love of his life, the perfect vineyards, and winery. With an eye for detail, Raventos i Blanc now boasts ninety hectares of vineyards across forty different plots. This diversity of vineyards is crucial for achieving the right power and finesse in the Cavas. All the vineyards are mature and produce beautiful, full clusters that are renowned throughout Spain. The varying climates in the extensive vineyards significantly influence the Cavas' power.
The oldest vineyard in Raventos
This top cuvée is made with the grapes from the oldest vineyard dating from 1964. The vineyard is planted according to the Gobelet system in the Vinya dels Fòssils region. The different plots filled with the grape varieties Macabeu, Xarel·lo and Parellada all contribute their share to this De La Finca Cava. Each vineyard has its own climate and therefore the grapes are harvested by hand at different times. Only when all the grapes have been harvested and double-checked are they pressed and stored as still white wine in steel vats. Now it is time to let the winemaker do his work, he will determine the blend for this top cava. The flagship Cava of Raventos i Blanc is called De La Finca Gran Reserva Cava. A true gem of a Cava, it has been aged for a very long time in the cellars of Raventos i Blanc. This Gran Reserva has developed its mousse in the cellars. Because it has been aged for a longer period, the mousse is even softer and more refined. The beautiful mousse (bubbles) comes from the "traditional" method, essentially the same process as with French Champagnes. The bottles are cellared for a long time at Raventos i Blanc, where this cava develops, developing flavor, a beautiful mousse, and a wonderful palette of impressions. This is followed by further aging once the cava is fully matured. As you can imagine, this is truly a magnificent cava! On the nose, this Raventos i Blanc De La Finca Gran Reserva Cava has hints of delicious yeast notes, brioche and toast, smoky notes, white fruit, apple, and a wonderfully broad aroma. The flavor is also complex and rich, with a lovely mousse and plenty of freshness, along with aromas of brioche and toast, vanilla, white fruit, and a lovely spiciness. This La Finca Gran Reserva Cava from Raventos i Blanc is a TOP-NOT-BEFORE.
