Rocca di Castagnoli Molino delle Balze Chardonnay comes from the beautiful Chianti Classico region, a region renowned for its excellent red wines, but also an excellent location for producing structured and elegant white wines. The area's terroir is characterized by the presence of various types of rock and minerals, such as Galestro stone and limestone, which provide the vines with essential nutrients and contribute to the structure and acidity of the grapes.
The unique combination of the rock and the various minerals in the soil, combined with the constant climate of the upper part of the Chianti Classico, creates the ideal conditions for growing Chardonnay grapes.
The Chardonnay grapes are harvested in the second half of September. After harvesting, the grapes are cold-pressed for 48 hours, followed by a soft pressing to extract the juices. The Chardonnay must is fermented in two different types of barrels: 50% in steel tanks and 50% in first- and second-pass barriques. This fermentation lasts approximately 10 days. After alcoholic fermentation, some of the wine also undergoes malolactic fermentation, partly in wooden barrels and partly in steel tanks. After fermentation, the Rocca di Castagnoli Molino delle Balze Chardonnay is aged in bottle for at least 10 months.
