Once the grapes have reached their peak ripeness, all three grape varieties are harvested separately, starting with Merlot, followed by Cabernet Sauvignon and Shiraz. Each variety is vinified and fermented in oak barrels. Then it's Coenie Snyman and Dirkie Mouton's turn to craft the finest estate wines for Rust en Vrede. After a long process of tasting, smelling, and observing, the entire wine is aged in oak barrels for at least eighteen months. For this red wine, they use all-French medium-toasted barrels.
