Around September, the Sangiovese grapes are carefully harvested by hand. The grapes are then transported directly to the winery in small crates. The grapes are then fermented in concrete tanks. San Polo Brunello di Montalcino is then aged for 30 months in oak barrels of various sizes, including 1000-liter, 2000-liter, and 4000-liter barrels. This extended period of oak aging contributes to the wine's complexity and development. After the long period of cellar aging, the wine is bottled for at least another six months before release.
