An extensive vinification process for San Polo Rubio

Fermentation takes place in specially designed, conical, refrigerated stainless steel tanks to maintain a controlled fermentation temperature. The wine is then aged in stainless steel tanks for a further 10 months. Finally, the wine is aged in bottle for another 4 months before release.
