Normally, red wines are made from the characteristic Sicilian Frappato grape. But this time, Santa Tresa has produced a sparkling rosé from it. And not just any old one! This organic wine has an elegant nose and is very refreshing and juicy.
Perfectly balanced grapes from Santa Tresa
The Santa Tresa winery has existed since 1697 and is now owned by the Girelli family. The estate comprises 50 hectares of land. They have been organic for many years and have been officially certified since 2009. The vineyards are located near the town of Vittoria in southern Sicily. The grapes are grown in the fertile volcanic soil of Mount Etna.
Frappato grapes are harvested by hand during the first days of September, once they have reached the perfect balance of sugars and acidity. The grapes are placed in small containers and refrigerated for approximately 48 hours to lower the temperature to 10 degrees Celsius. The grapes are then carefully destemmed and placed in a pneumatic press. Alcoholic fermentation then takes place at 18 to 20 degrees Celsius for 10 days. The secondary fermentation takes place in small autoclaves at a temperature no higher than 14 degrees Celsius. The special yeast strains added to initiate the secondary fermentation process very slowly at this low temperature, preserving the freshness and characteristic characteristics of Frappato.
