The perfect climate for Sicilian wines
Santa Tresa is one of Sicily's oldest and finest wineries. They produce top-quality wines from indigenous grape varieties grown in Vittoria. The grapes here benefit from ideal weather conditions. The vineyards enjoy the Sicilian sun and a cooling sea breeze, far enough from the sea. The result is organic wines with the ultimate expression of the grape varieties. They own 50 hectares of vineyards, largely planted on a unique soil of red clay, with a thick layer of limestone beneath. This limestone acts as a silt and stores water, ensuring the vines receive sufficient moisture even in high temperatures.
This Santa Tresa Grillo Spumante Brut is made from 100% Grillo grapes. The manual harvest begins in late August when the grapes are fully ripe. After destemming, the grapes are transferred to a pneumatic press, where they are pressed very gently to preserve the delicate characteristics of the Grillo grape. The must is then cooled, and the solids naturally settle to the bottom of the tank. Primary fermentation takes place at a temperature of 18 degrees Celsius for 8-10 days. The wine is then transferred to another stainless steel tank for secondary fermentation. The added special yeast strains work very slowly, at a temperature of 14 degrees Celsius, creating a delicate perlage and preserving freshness.

This sparkling wine has a straw-yellow color in the glass. It has a very fine bubble. A soft floral bouquet, and an equally smooth palate. Grillo Spumante is an incredibly versatile wine that makes an excellent aperitif, also perfect with tempura seafood or vegetables, fish, and mild cheeses.
