Generation after generation of high-level winemaking
Winemakers from father to son for five generations, Pierre Fabre traces his roots back to the acquisition of Château de Gaure in 2004. This beautiful area in the Limoux appellation is cultivated according to biodynamic principles. The diversity of the terroirs gives Château de Gaure wines their unique character. Pierre Fabre treats his soils with the utmost respect, facilitating the vines' adaptation to the soil by controlling their leaf structure and favoring low yields. This cultivation method, coupled with the poor soil and the advanced age of the vines, allows for concentrated and aromatic grapes.
Manual harvest for the Syrah Grenache Campaign
The grapes are hand-picked into small boxes and hand-sorted in the cellar before being destemmed and pressed. They are then fermented and aged for twelve months in four-year-old barrels, giving the wine roundness and a pleasant vanilla note. Wines from different vintages are blended together to ensure greater balance. This is what makes this Syrah Grenache Campagne so special. As a result, the wine is not vintaged and is marketed as a Vin de France. But a very special Vin de France... A true "vin de plaisir." A delicious combination of Carignan and Syrah, fruity, vibrant, and seductive, with violets, sweet cherries and blackberries, ripe vanilla, with jam, deliciously seductive, soft and juicy. A fruity and supple red wine. Delicious with oven-baked lamb roulade, charcuterie, coarse pâté, and mature cheeses.
