He continues to experiment with different styles and techniques, and he bottles his successful experiments into great wines. He has released the Golden Egg, Skeetfield Vineyard, Fat Sassy, and this Heartwood. The name reflects the fact that he uses only the heartwood of an old oak tree to make the barrels in which this wine ferments.
The highest-quality Chardonnay grapes are harvested by hand. This ensures the highest quality even in the winery itself. They are then gently pressed at the winery. The juice is fermented and transferred to new and old French oak barrels. The wine ages for a total of 11 months before bottling.
