The vinification process of Tormaresca Pietrabianca Chardonnay
In the far south of Italy, in the heel of the boot, lies the Tormaresca winery. Winemaking is booming here, thanks in part to the renowned Antinoria family. They have applied their expertise in the region, resulting in superb wines in a very short time. They own 500 hectares in Puglia's most important wine regions. Their wines are praised both nationally and internationally for their unparalleled quality, and as a result, they regularly win awards.
The Chardonnay grapes are carefully harvested and then taken directly to the winery. Here, a rigorous selection process follows, after which the grapes are destemmed and crushed. The must is then transferred to stainless steel tanks at a controlled temperature. After this, a portion is transferred to French oak barrels where alcoholic fermentation takes place, while the remaining portion is fermented in stainless steel tanks. This enhances the character of the Chardonnay grapes. Finally, the wine is blended and aged in stainless steel tanks for a further six months, followed by a further aging in bottle.
