The Langhe Bianco Dragon comes from the Luigi Baudana vineyard. After its acquisition by the Vaira family, Giuseppe is now responsible for its production. In addition to Chardonnay and Sauvignon Blanc, a small portion of Nascetta and Riesling from Aldo Vaira is now used in this wine. GD Vajra was founded in 1972 by Aldo Vajra. The initials refer to his grandfather, from whom he inherited the vineyards. He and his wife built the company with the goal of producing wines under their own label. These wines are made exclusively from their own grapes. Over the years, daughter Francesca and sons Giuseppe and Isidoro also joined the company.

The vineyard of Luigi Baudana Langhe Bianco Dragon

The original vineyard was located in Cerretta Piani in Serralunga d'Alba. The Nascetta was planted instead in Comune di Novello, the grape's place of origin, on the summit of the Ravera hill. Luigi and Fiorina always tended their vines with the utmost care. Since 2009, the vineyards have been cultivated according to Vajra's organic protocol. Intensive research is also conducted to monitor and improve biodiversity of both flora and fauna, not only in the vineyards but also in the vineyards and forests. The winery is sustainable and organically certified. The dragon depicted on the label is a symbol of courage. This drawing was designed by Gianni Gallo, and it represents his desire for this new venture. The grapes are harvested by hand at optimal ripeness. The fruit is carefully sorted and undergoes a whole-cluster, gentle pressing. Fermentations last up to twelve days in vertical vats at low temperatures. Malolactic fermentation is generally not present in Dragon. The wine is aged for six months in stainless steel tanks.

The wonderfully refreshing aromas

Upon opening the bottle, aromas of fresh fruit like kiwi, lime, and pear quickly emerge. Hints of minerality, such as flint and sea stones, complete the elegant bouquet. The palate is citrusy, with aromas of orchard fruit, macerated elderflower, and candied orange peel that shine through the fresh and vibrant acidity.
