The grapes for this Viento Aliseo Viognier are grown in La Mancha, a perfect region for producing organic wines. The plants are now 10 years old and produce beautiful grapes. This red wine is made from the unique vines of the Las Pedroñeras vineyard. Why choose the vineyards in La Mancha? The days are wonderfully warm in the vineyards, followed by perfectly cool nights. This creates a calm and balanced growing season. When the grapes are ripe, they are harvested by hand at night, after which they are pressed. This nighttime harvest ensures the grapes are still dormant and prevents oxidation due to the heat. After vinification and bottling, the wine is aged in the bottle for three months in the Dominio de Punctum cellars for an exquisite result.
