She longed to make a cosmopolitan Cava in sun-drenched São Paulo. She found the ideal vineyards in the heart of Catalonia and planted her Chardonnay, Macabeo, Parellada, and Xarello grapes there. 12 months of maturation for Villa Conchi Cava Brut

Thanks to the warm afternoons and cool nights, the vineyards are the perfect environment for these grape varieties. Coolness is essential for developing a pleasantly fresh acidity. When the grapes are fully ripe, they are harvested entirely by hand. This hand-picking allows for a rigorous selection of the grapes already in the vineyards. The various grape varieties are transported in small crates to the winery. Here, traditional vinification follows, with a second fermentation in the bottle to create the bubbles. This aging process continues for a full twelve months in the cellars of Villa Conchi.

What does Villa Conchi Brut taste like?

The Cava Brut is poured from a beautiful bottle with a lovely design, which has been continuously modernized over the years. In the glass, this cava is golden with green reflections. The bubbles dance elegantly in the glass. The nose offers fruity aromas of apples, lemons, toast, and hints of fresh mint leaves. On the palate, it's a pleasant and rich wine. A lovely tingle on the tongue from the bubbles, with plenty of yellow and tropical fruit. The long finish makes this cava a winner, truly exceptional for this price.
