The origin, grapes and craftsmanship behind this wine.

Viticcio Vin Santo del Chianti Classico Occhio di Pernice DOC 2011 is a rare Tuscan dessert wine made from 100% Sangiovese, crafted from dried grapes and aged for years in small oak barrels. This is an intense, amber-colored Vin Santo with dried fruit, nuts, vanilla, and fresh acidity that beautifully balances the sweetness.

This Vin Santo comes from Chianti Classico, with Greve in Chianti serving as the historic heart of the estate.

Location / Origin: Viticcio is located in Greve in Chianti, between Florence and Siena. This village lies in the heart of Chianti Classico, where Sangiovese has been the primary red grape for generations.

Vineyard management: Since 2003, 8 hectares of vineyards have been managed using biodynamic methods, and since 2013, the entire production has been organic. This aligns with Viticcio’s philosophy, which focuses on soil health and maintaining a natural balance in the vineyard.

Vineyard area: The estate encompasses a total of 58 hectares of vineyards. Of these, 28 hectares are located in the historic core of Chianti Classico, and 30 hectares are in Maremma, within the Bolgheri appellation.

Climate & Influences: The hills around Greve in Chianti provide altitude variations, ventilation, and distinct temperature differences between day and night. This helps Sangiovese build ripeness while retaining the fresh acidity that is essential for a sweet wine like Vin Santo.

The strength of this Vin Santo lies in the concentration of the dried grapes and the extremely long maturation in small oak barrels.

Harvest & Selection: The grapes are harvested early to preserve their natural acidity and are then dried for 3 months. This drying process concentrates the sugars, aromas, and structure while maintaining freshness.

Fermentation: After drying, the grapes are pressed and ferment slowly in selected 70-liter oak barrels. What is Vin Santo? Vin Santo is a Tuscan sweet wine made from dried grapes, known for its deep color, nutty aromas, and long aging process.

Aging / Wood maturation: The wine remains in small oak barrels for 6 years. This long maturation creates oxidative complexity, with notes of dried apricot, fig, toasted nuts, vanilla, and a layered, coating texture.

Alcohol percentage: With 19% alcohol, this Vin Santo has great power and intensity, ensuring the sweetness, acidity, and nutty aging are well-supported.

This Vin Santo is made entirely from Sangiovese, but in a style completely different from the dry red wines of Chianti Classico.

100% Sangiovese – Chianti Classico: Sangiovese gives this wine its amber-colored depth, fresh line of acidity, and spicy structure. The drying process gives the grape a concentrated expression of fig, apricot, nuts, and sweet spices.
