After the arrival of the first Cava, crafted by grandmaster Franceco Jr. of the Cruz del Castillo winery, it was soon time for a second. He chose to make a fully organic Cava. And it has been a success story, but that's all there is to it at Cruz del Castillo. The winery has been active in Spanish winemaking since 1850, starting in Rioja. There, they quickly gained a great reputation for their openness and pioneering spirit. That pioneering spirit has been passed down from father to son, and today, the fifth generation is at the helm of this beautiful winery. After a few years, they acquired several vineyards in areas including Penedès.

Near Barcelona lie the beautiful vineyards of Vina Xalbador, they are filled with the grape varieties for the Cava. Namely Macabeo, Parellada and Xarel lo which complement each other perfectly in this organic Cava. The harvest enjoys many hours of sunshine but also coolness. This cooling comes from the wind from the ocean and from the mountain tops. As a result, the harvest grows very evenly and the bunches retain their freshness and purity. This translates into the fresh taste of this Vina Xalbador Cava Brut Bio. The harvest is brought in by hand and during harvesting very strict controls. This way only the best bunches end up in the bottle.

The moment the Champagne cork is popped, the party begins. A beautiful, clean aroma is released, revealing notes of white fruit and citrus. In the glass, our senses are captivated by the bright yellow color and delicate bubbles. It smells wonderful, instilling a sense of lime and passion fruit, interspersed with green herbs and a touch of freshly baked bread. The palate is a pure indulgence, offering soft, refreshing notes of lime, green apple, and fennel on the tongue. Later, as this Vina Xalbador Cava swirls around the palate, it reveals notes of peach, vanilla, and a touch of toast. The long finish makes this cava a celebration from start to finish.
