The Chenin Blanc grape is versatile. It takes on different characteristics depending on where it's grown and how it ages. Seriously Cool Chenin Blanc is produced from 30-40-year-old bush vine vineyards in the Helderberg and Stellenbosch regions. The Helderberg vineyards are close to the ocean, resulting in a long growing season and ripe fruit with good concentration and balanced acidity. The Stellenbosch vineyards still enjoy a pleasant cool breeze through the vineyards but experience slightly warmer conditions, which contribute to the wine's beautiful richness.
Elegant and dry wines from Waterkloof
In 2004, Paul Boutinot purchased the Waterkloof wine estate. The estate is located on Schaapenberg Hill in Somerset West, Stellenbosch, just a stone's throw from the ocean. The vineyards are situated 300 meters above sea level and benefit from an excellent climate. They are characterized by their mineral character and elegant style. The estate is fully biodynamically managed. Thanks to the old bush vines, this wine has a balanced tannin structure and beautiful length.
The logo symbolizes the wind blowing through the vineyards. And that's precisely the most important aspect. The cooling air from False Bay ensures slow ripening, resulting in elegant, dry wines.
Traditional vinification of Seriously Cool Chenin Blanc
The grapes are vinified traditionally. Whole-bunch pressing is used, and the juice is then allowed to settle for 12 hours. Fermentation then follows, which lasts approximately five months. This Chenin Blanc boasts pronounced aromas of citrus, stone fruit, and especially pear, along with elegant floral notes. The wine has a full and rich mouthfeel thanks to the longer alcoholic fermentation that keeps the fine lees in suspension. The combination of concrete eggs and vats results in a wine with excellent structure and delightful freshness.
