Viña Ventisquero, though relatively new, has quickly established itself as a leader in innovative winemaking. Founded by the visionary Gonzalo Vial, who also owns Agrosuper, Chile's largest food company, the winery has its roots in the Maipo Valley and quickly expanded its vineyards to the Casablanca and Apalta Valleys. Since launching its first vintage in 2001, Ventisquero has been committed to environmentally friendly practices, such as minimizing water use, offsetting carbon emissions, and preserving the natural environment. With vineyards spread across seven prominent wine regions, including Maipo, Casablanca, Apalta, Lolol, Leyda, Peralillo, and Huasco (Atacama), Ventisquero guarantees that all its wines are made exclusively from its own grapes. The Yelcho Sauvignon Blanc undergoes careful fermentation at cool temperatures, protected from air. By maturing the wine on its lees and stirring regularly (bâtonnage), it develops a creamy and layered texture.
