For this red wine, the grape varieties Corvina, Corvinone, and Rondinella are used. These are grown in the best plots of Torre del Falasco. The old, thick trunks provide the winemaker with a unique harvest, and they work hard to achieve this. The bunches receive full attention and mature in a wonderful climate. The abundant sunshine allows the bunches to ripen, and the breeze from Lake Garda provides ample cooling. After harvest, the wine is pressed and fermented, maturing in the cellars of Torre del Falasco. Following this, the craftsmanship begins: the must from the Amarone wine is added to the juice, and the Valpolicella Ripasso undergoes a second fermentation. The juice becomes full-bodied and creamy, with a very smooth flavor.
As soon as the cork pops, we smell the most beautiful notes of black fruit, interspersed with vanilla and plums. In the glass, it blew a beautiful deep purple-red. With our noses to the glass, we caught impressions of black fruit, vanilla, cedar, and spice. The ripe aroma made our mouths smile from corner to corner. We took a sip, and this red Torre del Falasco Valpolicella Ripasso enchanted our senses, with a rich black fruit aroma accompanied by hints of toffee, chocolate, and stewed cherries.
