Waterkloof Estate. In 2004, this magnificent wine estate was purchased by Paul Boutinot. Waterkloof is located on the Schaapenberg in Somerset West, Stellenbosch, just three kilometers from the ocean. The vineyards for Waterkloof wines are situated on the upper slopes of the estate, 300 meters above sea level. They are characterized by their mineral character and elegant style. The estate is fully biodynamically managed.

Waterkloof wines are characterized by their mineral character and elegant style. The estate operates entirely biodynamically. The logo symbolizes the wind blowing through the vineyards. And that's precisely the most important aspect. The cooling air from False Bay ensures slow ripening, resulting in elegant, dry wines. The vines for this Sauvignon Blanc have an average age of 20 years and are planted at an altitude of 270 to 300 meters above sea level. The soils are sandstone with medium-sized stones, which aid drainage and moisture retention. Waterkloof follows a traditional, minimalist approach in their gravity cellar, meaning they interfere as little as possible with the winemaking process. This allows the flavors native to each vineyard to ultimately express themselves in the wine. To achieve this, all grapes are pressed whole bunch, ensuring the juice is extracted in the gentlest way possible. After a very slow fermentation process of approximately eight months, followed by an additional month on the primary lees, the wine is racked off in preparation for bottling.What does the Waterkloof Sauvignon Blanc taste like?
