The grapes for this wine come from various vineyards in inland California. Most of the Chardonnay is fermented in American oak, followed by malolactic fermentation. The wine then ages for 3 to 9 months in oak barrels with a high degree of toasting, which produces pronounced notes of wood and spice. The aging on the lees (sur lie) gives the wine a fuller and rounder flavor.
This wine pairs wonderfully with dishes like a whole roasted chicken, fish in butter sauce, or pork tenderloin. Serve slightly chilled, at 8-10°C, to fully appreciate its full aromas and rich flavor.
