The Paradiso family works in the agricultural landscape around Cerignola.
- Location / origin: The grapes come from the rural area of Cerignola, in the province of Foggia in Puglia, Southern Italy. The wine falls under the Puglia IGP designation of origin.
- Soil: The vineyards for the 1954 have limestone and clay soils. Clay can retain water, thereby providing a reserve for the roots.
- Vineyards: The vines are trained using the cordon method with short spur pruning. This pruning technique helps the grower manage the number of fruit-bearing buds.
A long maturation process in several stages gives the concentrated fruit time to develop.
- Fermentation: After destemming and crushing, the juice and skins remain together for 15–20 days in temperature-controlled stainless steel tanks. This skin contact provides color and tannins.
- Aging: First follows 2 months of rest in stainless steel, then 12 months in barriques, and subsequently another 3 months in stainless steel. The wood phase adds spicy accents and helps to soften the structure.
- Bottle aging: The wine matures for another 4 months in the bottle before leaving the estate.
The composition aligns with the full, ripe style of this cuvée.
